It’s time to get cozy!
This week we’ve got a couple of our favorite recipes for you! The chilly weather is here, and it’s the perfect time to cozy up with a warm bowl of soup. Whether you’re craving a classic like Chicken Noodle Soup or something rich and flavorful like Butternut Squash Soup, these easy recipes are here to make your nights a little cozier.

Chicken Noodle Soup
Ingredients:
2 tbsp olive oil
1 onion, diced
2 carrots, chopped
2 celery stalks, sliced
3 garlic cloves, minced
8 cups chicken stock
2 cups cooked, shredded chicken
2 cups egg noodles
1 tsp dried thyme
1 tsp dried parsley
Salt and pepper to taste
Instructions:
Heat olive oil in a large pot. Sauté onion, carrots, and celery until softened (about 5 minutes).
Add garlic, thyme, and parsley, and cook for another minute.
Pour in chicken stock and bring to a boil.
Stir in chicken and noodles, and simmer until noodles are tender (about 8-10 minutes).
Season with salt and pepper to taste. Serve warm with fresh bread or crackers.
Recipe 2: Butternut Squash Soup
Ingredients:
1 butternut squash, peeled and cubed
1 onion, diced
2 carrots, chopped
2 cups vegetable stock
1 can coconut milk (or heavy cream)
1 tsp cinnamon
1/2 tsp nutmeg
Olive oil, salt, and pepper
Instructions:
Roast the squash, onion, and carrots with olive oil, salt, and pepper at 400°F for 25 minutes.
Blend roasted veggies with stock, coconut milk, cinnamon, and nutmeg until smooth.
Heat through on the stove and serve with crusty bread or pumpkin seeds for garnish.
